IDEAL BREWING TEMPERATURE

According to the National Coffee Association the ideal brewing temp is 195-205 degrees F. The higher the temperature the greater the extraction. The extracted flavors are influenced by even a change of a few degrees. Perhaps at 204F you taste the butterscotch and jasmine flavors, yet at 206F the jasmine flavors have gone extinct.
